Or Gasthäuser, inns, pubs with a few rooms to let. Any recommendations?

Definitely either Fäßla or Spezial. These are local breweries which are also inns. We stayed in Fäßla, which was basic, inexpensive, and perfectly decent. Spezial was closed when we were there, but looked a bit nicer. The location was the same for both, since they were literally across the street from one another. And, anyway, Bamberg is so small that location doesn’t matter much.
I would also recommend Fäßla (haven’t stayed at Spezial). The breakfast buffet is legendary and when you’ve finished breakfast you can move on to a nice mug of Lagerbier in the courtyard.
Where is there Porter in Bamberg?
If Faessla and Spezial are full, I recommend Die Alte Post. It’s between the train station and Spezial. Very simple, but clean and cheap. http://www.die-alte-post.de. But try to stay at a brewery if you can!
We’ve always stayed at the Hotel St Nepomuk, in the middle of the river.
So Barm, you did not find the secret porter brewery in Bamberg? It’s known only to a few, I wasn’t supposed to reveal that to anyone beyond level 5. Sorry about that.
I usually stay at Spezial, rooms a bit bare but very comfortable beds, no phone, no tv, washbasin in room, not in shower/wc area. Breakfast served at table and imho superior to Fässla’s. But the renovated Fässla rooms are very nice and have tv. And the washbasin is in with the shower… Slightly more expensive.
Then there are the Ferienwohnungen, holiday apartments, if you are into self-catering and want to stay more than 2 or 3 nights (and who wouldn’t): Ferienwohnung Albert in the Judenstrasse, Bierregion Franken in the Sand area, both highly recommended.
Recommend Spezial. Stayed there about a month ago and thought it was nicer than Faessla.
